marine_farms are not rendering....
It would also be cool if we could map out floating restaurants, floating houses, etc

Floating restaurants, etc should be tagged as "seamark:type=hulk" (IHO definition: "A permanently moored ship.")
There should also be a "seamark:hulk:category" tag with one of the following values: "restaurant", "historic", "museum", "accommodation", "floating_breakwater", "casino_ boat"

Wouldn't it be better to adopt already widely used landuse=aquaculture, or should we use both tags? I know landuse=aquaculture also are used to tag fish ponds on land

It is a matter of which layer you want the object to be rendered on. "seamark:" tags render on the Seamark layer, standard OSM tags render on the Streetmap layer (if at all - there are many OSM tags that are not rendered). There are many cases where you may want both, in which case uses both tagging schemes on a single object. Remember, we are considering making our own default base layer, therefore all objects of navigational interest need to appear on the Seamark layer. Also, as part of my new integrated editor-renderer-importer-exporter software package, data without "seamark:" tags will not get processed.
